TOMATO PIE 
5 med. tomatoes, peeled, sliced and drained
1 (9 inch) baked pie shell
1/2 c. mayonnaise, not salad dressing
1 clove garlic, peeled and crushed
1/2 c. grated Parmesan cheese
1/4 tsp. pepper, or to taste
Chopped fresh basil (2 tbsp. or 2 tsp. dry)
1/4 c. Ritz cracker crumbs
2 tsp. butter

Arrange tomatoes in shell. Mix mayonnaise, garlic, cheese, pepper and basil. Spread over tomatoes. Sprinkle with cracker crumbs; dot with butter. Bake at 425 degrees for 20 to 25 minutes. Makes 6 to 8 servings.
