JUDGE SCARBOROUGH'S TOMATO PIE 
1 9" pie crust
5 tomatoes, med.
Salt & pepper
1 c. chopped green onions
Oregano & basil
2 c. sharp Cheddar cheese, grated
1 c. mayonnaise
1/2 c. Parmesan cheese

Bake crust at 400 degrees for 10 minutes. Remove and reduce heat to 325 degrees. Slice tomatoes and place in crust. Sprinkle with salt, pepper, oregano and basil. Use 1/2 cup of onions. Then repeat layers of tomatoes and 1/2 cup onions.

Combine cheese and mayonnaise for topping. Sprinkle with Parmesan cheese. Bake at 325 degrees for 45 minutes.
