ST. JOSEPH RICE BALLS 
2 c. rice
2 1/2 c. sugar
1 oz. lemon extract
5 eggs
5 to 6 c. flour
3 tbsp. baking powder

Cook rice, drain and pour into large bowl. Let cool. Add sugar, lemon extract, and eggs and blend well. Mix flour and baking powder and add 1 cup at a time to mixture. (It should be thick enough to drop off a teaspoon.) Drop in hot Crisco oil.

When golden brown, remove from oil with slotted spoon. Sprinkle with sugar.
