WATERMELON RIND PICKLES 
1 bottle lime from drug store
1/2 gal. vinegar
10 lb. rind, cut into cubes
8 lb. sugar
1/3 pkg. pickling spices

Soak the rind overnight in lime solution (water to cover). In morning, drain and cover again with fresh cold water. Add salt, about a cupful. Let come to a boil for 20 minutes. Drain and cover again with cold water. Boil again for 20 minutes. Drain and add sugar, vinegar and spices. Boil for one hour. Pack in jars and seal.
