SOUTHLAND STEAK AND OYSTERS 
2 1/2 lbs. well aged rump or cube steak, 1 1/2 inches thick
1 pt. oysters (4 lg. or 6 med.)
3 tbsp. lemon juice
Chopped parsley
3 tbsp. butter
2 tsp. salt
1/2 c. boiling water

In heavy skillet, broil steak about 5 minutes each side. Drain oysters and heat in saucepan for few minutes to start juices, spread over steak.

Make sauce blending lemon juice, butter, salt and boiling water. Pour sauce over and bake at 375 degrees for 15 minutes. Garnish with parsley and serve immediately.
