SOUTHERN HOE CAKES 
2 rounded tbsp. self-rising cornmeal
1 rounded tbsp. self-rising flour
1/4 c. water or enough to make thin batter
3 tbsp. cooking oil

Mix dry ingredients, then add water and mix well. Put cooking oil in small skillet and heat well until it causes the batter to fry. Pour batter into hot fryer; reduce heat to medium high and brown on one side and then turn over and brown on the other.
