SOUTHERN JAM CAKE 
2 c. sugar
1 c. butter
3 eggs
1 c. buttermilk or sweet
3 c. cake flour
1 tsp. vanilla
1 c. blackberry jam or grape
1 c. nutmeats (walnuts good)
1 c. raisins
1 1/2 c. coconut
1 tsp. baking soda
1/2 tsp. salt

Combine sugar, flour, soda, salt and butter. Cut in until almost fine as meal. Add nuts, raisins, coconut. Mix milk, well beaten egg yolks and jam (mix real good). Add to dry ingredients. Beat about 5 minutes. Fold in well beaten egg whites and vanilla. (I use 3 (9 inch) cake pans). Bake 300 degrees for 1 hour or until cake turns loose from sides of pan.

FILLING:

2 c. sugar
2/3 c. sweet milk
1 c. butter
1 tsp. vanilla

Mix sugar, milk and butter and cook until it forms a soft ball when dropped in cold water. Remove from heat. Add vanilla and beat real good until smooth. Spread on cake. I put walnut halves on top of filling.
