DANTE'S CHICKEN | |
1/2 tsp. ground ginger 1/2 tsp. curry powder 1/4 tsp. red pepper 4 (4 oz.) chicken breasts, boned & skinned Vegetable cooking spray 2 cloves garlic, minced 3 tbsp. minced shallots 1/2 c. sliced celery 1/2 c. sweet red pepper strips 1/2 c. canned chicken broth 1/2 c. chablis or dry white wine 1/4 tsp. ground ginger Combine first 3 ingredients, rub spice mixture on chicken; set aside. Coat large skillet with cooking spray; place over medium heat until hot. Add garlic and next 3 ingredients; saute 1 minute, stir constantly. Remove from skillet. Put chicken in skillet; cook. Stir once. Put vegetables in skillet, combine broth, chablis, 1/4 teaspoon ginger; stir well. Pour over chicken. Cover and reduce heat. Simmer 15 minutes. |
