SPICY APPLE BUTTER 
1 lb. cooking apples
1/4 tsp. ground cloves
1 tsp. finely grated lemon peel (optional)
1 tbsp. vinegar
2 c. unsweetened apple juice
1/4 tsp. ground allspice
2 tbsp. lemon juice
1/2 tsp. liquid sugar substitute

Wash, quarter and remove stems from apples; do not peel or core. In large saucepan, simmer apples and apple juice, stirring occasionally for about 20 to 45 minutes, or until apples are soft; strain mixture and return puree to saucepan.

Stir in cloves, allspice, lemon peel (if using), lemon juice and vinegar. Simmer gently until no liquid seeps from edges of teaspoonful of mixture when placed on a cold plate. Remove from heat and stir in sweetener.
