EGGPLANT DRESSING 
1 lb. ground beef
2 lg. pork chops, chopped
1 green pepper
1 lg. onion
1 eggplant
1 1/2 c. cooked rice
Salt
Pepper

Brown beef and pork chops; add pepper and onion and cook until onion is tender. Peel, chop, cook and mash the eggplant and add to meat along with rice, salt and pepper. Ready to eat or can be baked in 350 degree oven until top is slightly brown.
