CINNAMON - PEANUT COOKIES 
1 c. all-purpose flour
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 c. butter, room temperature
1/2 c. light brown sugar, packed
1/2 c. granulated sugar
1/2 c. creamy peanut butter
1 lg. egg
1 tsp. vanilla extract

Preheat oven to 350 degrees. Have cookie sheets ready. Mix flour, salt and cinnamon. Put remaining ingredients into a large bowl. Beat with electric mixer until well blended. Gradually add flour mixture, beating just until blended.

Drop heaping teaspoonfuls 1 1/2 inches apart onto ungreased cookie sheet. Bake 10-12 minutes just until lightly golden. Do not overbake. Remove to wire rack to cool.
