CREAMED SMOKED TURKEY 
1/4 c. butter
1/4 c. flour
4 c. half & half
3 tbsp. dry vermouth
1/2 lb. fresh snow peas or 1 pkg. frozen
2 1/2 lb. smoked turkey, cubed
1/2 c. dried apricots, sliced thin
1 can water chestnuts, sliced

In a large saucepan, melt butter, then stir in flour. Cook 1 minute until smooth. Gradually add cream, stirring constantly over low heat. Add wine. Add turkey, apricots, and water chestnuts. Cook on medium, stirring constantly. Add peas just before serving, but heated through. Serve over toasted English muffins, toast points or biscuits. Makes 16 servings, 1/2 cup each at 280 calories.
