SALMON CROQUETTES 
1 c. fresh (end pieces) bread crumbs from 2 slices bread
1/4 c. cornmeal
1/4 c. flour
1 tsp. baking powder
1 egg, beaten
1/4 c. chopped onion
1/4 c. chopped bell pepper
1/2 c. 2% milk
1/8 tsp. black pepper
1 (7 1/2 oz.) can salmon, drained
2 c. cholesterol free shortening for frying

Place salmon in large mixing bowl and add bread crumbs, cornmeal, and flour and mix with hands, breaking up salmon into small pieces breaking the bones up with fingers. Add eggs, onions, bell pepper, milk, baking powder, and pepper. Mix well.

Form salmon mixture into 10 patties each about 1/2 inch thick. Heat 2 cups shortening in large iron skillet. Saute salmon croquettes 5 minutes over medium heat until golden brown and crisp. Turn, adding remaining shortening, if necessary, and saute about 5 minutes on other side. Serve immediately. Makes 6 servings.

Rice, steamed green beans, canned biscuits are tasty accompaniments.
