TURNIPS AU GRATIN 
1 1/2 lb. turnips, pared and sliced (end product about 4 c.)
3 tbsp. butter
1/4 c. chopped onions
1/4 c. chopped green pepper
1/4 c. chopped celery
3 tbsp. flour
1 c. milk or cream (or more)
1/2 c. sharp Cheddar cheese, grated
Snipped parsley
Paprika
Salt and pepper to taste

Cook turnips in enough water to cover. Salted and boiling until tender. Drain. Melt butter and saute vegetables until golden. Blend flour in slowly smoothing it in with the butter as you add it. Add milk as you need it to the desired consistency. Add cheese and salt and pepper, cook on low heat until melted into sauce. Combine chees sauce and turnips and pour into baking dish or casserole of one quart capacity. Top with seasoned bread crumbs or not, as you prefer. Dust top with paprika and sprinkle with parsley bits.
