CORNED BEEF SALAD 
1 (12 oz.) can corned beef
1 lb. fresh mixed vegetables
Sm. onion
1/2 c. green pepper
1 med. carrot
1/2 c. celery
2 hard boiled eggs
1/2 tsp. salt
1/4 c. mayonnaise

Chop corned beef, vegetables, onion, green pepper, celery, hard boiled eggs. Grate carrot. Combine all ingredients except mayonnaise and toss lightly. Add mayonnaise and blend. Chill several hours.
