1 lb. ground beef, drained
1 pkg. taco seasoning mix
1/2 of 16 oz. can whole kernel corn
1 can kidney beans
Corn bread mix
1/2 c. chopped onion
1/2 c. grated Cheddar cheese
1 sm. jar pimentos (optional)
1/4 c. red and green peppers (optional)

Brown beef and drain. Stir in 1 cup onions. Sprinkle 1 package taco seasoning mix over beef. Pour in water, beans and simmer for 15 minutes. While this is simmering, follow directions on corn bread mix. To corn bread mix stir in cheese, 1/2 can of corn and 1/4 cup onions. If you wish use green and red peppers and small jar of pimentos.

Pour beef mixture in a casserole dish. Top with corn bread mixture. Bake in preheated oven for 40 minutes at 400 degrees or until toothpick comes out clean. This can be prepared ahead, up to the baking time.
