BEEF TENDERLOIN 
3 lb. trimmed beef tenderloin
coarsely ground black pepper
lemon pepper
1 clove garlic, minced
1 c. soy sauce
1/4 c. bourbon
2 strips bacon
1/2 medium onion, sliced

Sprinkle tenderloin with peppers. Put in a heavy duty Ziploc bag. Mix soy sauce, bourbon and garlic and pour over meat. Close bag and let sit for 2 hours at room temperature. Preheat oven to 450°F. Place meat on broiler rack. Put onion and bacon on top and pour marinade over all. Reduce heat to 400°F and roast meat in oven for 25 to 30 minutes or until internal temperature is at least 135°F or more.
