SHRIMP/GARLIC SPAGHETTI 
6 cloves thinly sliced garlic
5-6 med. diced tomatoes
6 tbsp. fresh chopped basil (or 1/2 tbsp. dried)
1 tbsp. olive oil
1 lb. shrimp
1/2 pkg. spaghetti

In large pot, boil water. Clean shrimp and set aside in medium size skillet. Add spaghetti to boiling water. When spaghetti is half cooked, start cooking shrimp on low heat. In a large skillet heat olive oil until hot. Add garlic and stir frequently (do not brown). Cook for a few minutes then add tomatoes and basil. Meanwhile, turn shrimp over. Cook garlic, tomatoes and basil until juice forms, then lower heat. Drain spaghetti and mix in with garlic, tomatoes and basil. Place on serving platter with shrimp placed on top.

This initially looks more complicated than it really is. Once you've made it a few times you get the hang of it and it only takes 15 to 20 minutes to make.
