BLUEBERRY NUT BREAD | |
4 c. sifted flour, divided 1 1/3 c. sugar 2 eggs, beaten 1 1/2 c. fresh orange juice 2 c. washed & dried blueberries 3 tbsp. baking powder 1 tsp. salt 1 tsp. baking soda 1/4 c. melted butter 2 tbsp. grated orange rind 1 1/2 c. chopped nuts In large bowl, sift together 3 1/2 cups of the flour, salt, sugar, baking powder and baking soda. Mix in the eggs then butter, orange juice, and orange rind. In medium bowl, toss together the remaining flour, blueberries and nuts, blend gently into egg mixture. Divide batter evenly in 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour, until bread tests done. Cool in pans 10 minutes, remove from pans and cool completely on cake rack. Wrap in freezer paper or plastic bags, seal and freeze. To serve, remove from freezer 2 hours before serving and place wrapped bread on cake rack to thaw. |
