PINA COLADA FRUIT SALAD 
DRESSING:

1 c. unflavored yogurt
2 oz. jar crystallized ginger
1/2 of a 6 oz. can frozen pineapple juice concentrate, thawed

Combine yogurt, crystallized ginger and pineapple concentrate in container of electric blender. Blend until smooth. Cover and refrigerate until needed.

FRUIT SALAD:

1 pineapple, cut into chunks
1 cantaloupe, cut into chunks
3 navel oranges, sectioned
3 kiwi fruit, cut into slices
1 c. shredded toasted coconut

Combine fruit in serving bowl, cover and keep chilled. Just before serving, stir dressing into salad; sprinkle with coconut.
