SAUSAGE FRITTATA 
1/2 lb. pork breakfast sausage, bulk
8 eggs
Black pepper to taste
1 tomato, chopped
3 green onions, sliced
1/4 c. water
1/4 c. butter
1 c. cheddar cheese, shredded

Brown sausage with green onions until sausage is well cooked. Pour off excess fat. Beat together eggs, water and pepper. In an 8" omelette pan, heat, 1 tablespoon butter until frothy. Pour into 1/4 of the egg mixture. When eggs begin to set, sprinkle with 1/4 of the sausage mixture, tomato and cheese. Continue to cook until eggs are set and cheese is melted. Slide out onto serving platter and fold in half. Place in warm oven. Repeat with remaining ingredients to make 3 or more omelettes.
