SICILIAN FRITTATA | |
2 tbsp. oil 2 potatoes, sliced 1/2 c. onion, chopped 1/4 c. green pepper, chopped 2 cloves garlic, minced 2 c. broccoli, chopped 6 eggs 1/4 c. Parmesan cheese 1/4 c. water 1/2 tsp. basil 1/4 tsp. salt Pour over vegetables in pan. Cook on low 10 to 15 minutes until set. Grate 1/2 cup any kind of cheese over top before serving. Potatoes are more interesting and nutritious when fried with skins left on. |
