RICOTTA FRITTATA 
1 lb. ricotta cheese
1/2 cup grated romano cheese
1/2 lb. mozzarella cheese, grated
1 lb. Italian sausage, cooked and drained
1 to 1 1/2 dozen eggs, beaten well
2 to 3 tbsp. all-purpose flour

Mix ingredients well. Bake in 300°F oven in glass pan for 1 hour. If using a metal pan, bake 40 to 45 minutes.
