ALL-IN-ONE CHEESE PIE 
1 1/2 c. milk, may be skim or 2%
1/2 c. biscuit mix
6 tbsp. butter, room temperature
3 eggs
Chopped fresh herbs or curry; optional
1 c. fresh broccoli, zucchini, cauliflower and/or yellow squash (one or a mixture)
2 scallions, chopped
1 (4 oz.) can sliced mushrooms, drained (or fresh)
1 c. grated sharp cheddar cheese

Preheat oven to 350 degrees. Combine first 5 ingredients in blender and mix well. Turn into ungreased deep 9 inch or regular 10 inch pie plate. Add vegetables, poking into batter. Top with scallions, mushrooms, and cheese.

Bake until top is golden, about 45 minutes. Let stand 10 minutes before serving. May be reheated easily in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
