TURKEY CHEESE PIE 
1 lb. ground turkey
1 (15 oz.) lowfat ricotta cheese
2 eggs, beaten
1 c. fresh mushrooms
1/2 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, minced
1/4 c. fresh parsley
1 tsp. oregano
1/4 c. Parmesan cheese
2 med. tomatoes, sliced
2 oz. Cheddar cheese

Spray skillet with Pam. Cook turkey, mushrooms, peppers, onions, oregano until turkey is no longer pink and vegetables are tender. Drain off any liquid, mix in Parmesan cheese. In mixing bowl, combine ricotta cheese and eggs. Add a bit of pepper to your own taste. Put meat mixture in a pie plate.

Spread ricotta cheese mixture over meat mixture in pie plate. Bake uncovered at 350 degrees for 25-30 minutes. Take out, arrange tomato slices around pie. Sprinkle with Cheddar cheese. Bake for 5 minutes. Serves 4-6.
