APPLE CINNAMON COFFEE CAKE 
2 cups whole-wheat flour
3/4 cup sugar
2 tsp. baking powder
3/4 cup cinnamon applesauce (I use Mott's)
1/4 cup (1/2 stick) butter
1 egg
1 cup milk (skim)
1 tsp. vanilla extract
ground cinnamon, to taste (McCormick)

CRUMBLE TOPPING:

4 tbsp. all-purpose flour
3 tbsp. butter
8 tbsp. sugar
ground cinnamon, to taste

Preheat oven to 350°F. Grease bottom and sides of a 9x13-inch pan.

Mix together flour, sugar, cinnamon and baking soda in medium bowl. Set aside.

Mix together butter, applesauce, egg, milk and vanilla in another bowl. Add the flour mixture to the butter mixture. Stir until well mixed. Set aside.

For crumble, mix together flour, butter, sugar, and cinnamon in small bowl. Stir until crumbly.

Note: Do not over-stir crumble mixture or will turn doughy.

Sprinkle crumble mixture on top of batter.

Bake at 350°F for 25 minutes.
