VIRGINIA'S CORN PUDDING 
9 big ears corn
8 oz. cream cheese
1 c. ham, cut into cubes
1 c. green pepper, chopped
Bacon fat
1 big onion, chopped
5 eggs, beaten
3 tbsp. sugar
1/4 c. butter

Grate corn, blend in blender. Remove half the quantity. Add 2 eggs and blend again. Add cream cheese and blend. Add remaining eggs, sugar and blend. Stir in remaining corn and ham. Soften onion in bacon fat. Add pepper and cook until both are done. Add butter. Add corn mixture. Pour into casserole. Bake at 350 degrees for 1 hour.
