THE SULTAN'S FAVORITE 
1 1/2 lbs. ground turkey
1 1/2 c. toasted bread cubes, 1/4 inch
1 c. minced yellow onion
2/3 c. chopped parsley
1/3 c. milk
1 1/2 tbsp. dried oregano leaves, crush before using
1/2 tsp. cumin, ground
1/2 tsp. black pepper, freshly ground
1/4 tsp. cayenne pepper
2 tbsp. sesame oil
1/2 tsp. MSG (optional)
1 tsp. salt
2 tbsp. soy sauce
2/3 c. flour
3 tbsp. paprika
1/4 c. vegetable oil

Mix well all ingredients, except flour, paprika, and oil. Shape meat mixture into plump oblong forms 3 1/2 inches long. Roll patties in flour, then coat with paprika. Saute in vegetable oil, turning to brown all sides. Lower heat; cover and allow to cook through. Drain. Serve with plain yogurt, sliced tomatoes, chopped onions, kalamara olives, and warm pita bread. Makes 8 patties.
