PUMPKIN CAKE ROLL 
3 eggs, beaten for 5 minutes
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

Beat eggs and sugar together. Add lemon juice. Mix together dry ingredients. Add pumpkin to egg mixture,, alternating with dry ingredients. Grease and flour pan. Pour batter into pan. Cover with 1 cup chopped nuts. Bake at 375 degrees for 15 minutes. Invert on towel sprinkle with powdered sugar.

8 oz. cream cheese
1 c. powdered sugar
1/2 tsp. vanilla
4 tbsp. butter

Blend and spread on cake. Roll and chill.
