RICE AND SPINACH CASSEROLE 
1 c. cooked brown rice
2 c. cottage cheese, sieved to get moisture out
2 eggs
1 pkg. frozen, chopped spinach, thawed and water removed
1 (4 oz.) can green chili peppers, seeded and chopped
1 (6 oz.) pkg. Monterey Jack cheese, cubed
1 1/2 tsp. salt
1/8 tsp. pepper

Combine all, except cheese; set 1/2 cup aside. Put the rest of the cheese in with ingredients in an oven dish. Bake at 350 degrees for 15 minutes. Remove from oven and put the rest of the cheese on top and cook and let it melt into the casserole at least 15 more minutes or until a knife inserted comes out clean.

Note: I squeeze the water out of the spinach.
