FISH BROCCOLI ROLLUPS 
1 bunch fresh broccoli or 1 (10 oz.) pkg. frozen
4 fish fillets (orange roughy, flounder or sole)
Salt and freshly ground pepper to taste
Juice of 1 lemon
2 tbsp. butter
2 tbsp. flour
1 c. half and half
1 tbsp. dry sherry
Grated peel of 1 lemon
1/2 c. slivered almonds

Steam broccoli until tender. Arrange steamed broccoli spears into four bundles with flowerets at both ends. Wrap one fillet around each bundle. Arrange seam side down in 9 inch square glass baking dish. Sprinkle with salt, pepper and lemon juice. In medium saucepan, melt butter and stir in flour. Add half and half and heat to boiling. Stir in sherry and lemon peel. Pour over fillets and sprinkle with almonds. Bake at 350 degrees for 20 to 25 minutes until fish flakes when tested with a fork. I have also done this with seasoned steamed spinach in place of the broccoli. Serve with rice and fresh fruit salad.
