LEMON DROP COOKIES 
1/2 c. shortening
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. sifted flour
3/4 tsp. salt
1/2 tsp. baking soda
1/4 c. lemon juice
red or plain sugar

Cream together shortening, sugar, eggs and vanilla until light and fluffy. Sift together dry ingredients; add alternately with lemon juice. Drop by teaspoon 2-inches apart on greased cookie sheet. Sprinkle with red or regular sugar.

Bake at 375°F for 10 to 12 minutes.

Makes about 3 dozen.
