MANYA'S SPANAKOPETA | |
3 lbs. fresh spinach 2 bunches scallions, finely chopped 1/2 c. minced parsley 1/2 tsp. dill 1 lb. crumbled feta cheese 5 eggs Salt Olive oil 1/2 lb. filo pastry leaves 1 c. melted butter Wash spinach; cut off stems, dry completely with towels and chop. Brown scallions in 1/2 cup olive oil until tender. Combine spinach, parsley, dill, beaten eggs, and cheese; add cooked scallions; season with salt lightly and mix well. Grease a 9 x 13 inch pan and line with 5 of the filo sheets, brushing each sheet with the melted butter combined with 1/2 cup olive oil. Spread the spinach mixture over the filo, and top with remaining sheets of filo, brushing each again with butter and oil. Brush the top sheet and bake at 350 degrees for 45 minutes. Cool and cut into squares. |
