HOMEMADE SALAMI | |
2 lbs. ground chuck 1/4 tsp. onion powder 1 1/4 tsp. liquid smoke 1 tsp. mustard seed 2 tbsp. salt 1/8 tsp. garlic powder 1 c. water 1 tsp. peppercorn Mix all ingredients well. Shape into 3 rolls. Wrap in foil and refrigerate 24 hours. Remove foil. Bake in shallow pan at 300 degrees for 1 hour. Turn and bake 30 minutes longer. Let cool at room temperature, then refrigerate. |
