LEMON BARS (Easy & Good) 
1 c. flour
1/2 c. confectioners' sugar
1 stick cold butter

Mix flour and sugar. Cut in butter until crumbly. Pat crumbs into pan. Bake at 350 degrees for approximately 20 minutes (or until it starts to brown around edges).

FILLING:

2 eggs
1/2 tsp. baking powder
1/3 c. lemon juice
1/3 c. flour
Grated rind of 1 lemon

Mix all ingredients. Pour over baked crust. Bake at 350 degrees for 20-35 minutes. Top layer will be slightly brown and barely solid. Dust with confectioners' sugar. Cut into squares.
