SAM'S KINGFISH SAUSAGE 
2 lbs. kingfish (raw)
2 lbs. fat pork sausage (cheap), or 2 lbs. pork trimmings
1 tsp. sage (with pork trimmings), or 1/2 tsp. (with fat sausage)
2 tsp. salt
1 tsp. black pepper
1/2 tsp. red pepper (more or less)
1/4 tsp. ginger
1/4 tsp. allspice

Grind and mix. Fry a pattie and taste. Add more seasonings if you like. You won't taste the fish and patties will be light pink in color.

Makes 12 to 15 servings. Goes good with eggs for breakfast.

Makes fine sandwich with mustard, etc. Freezes well.
