FRIED CATFISH 
Catfish fillets or whole
1/2 c. flour
1 1/2 c. cornmeal
1/2 tbsp. spice blend buttermilk
1 c. oil

Wash and dry catfish. Dip in buttermilk; roll in coating. Fry in 1/2 inch of oil at 375 degrees.

CATFISH SEASONING:

1 1/2 tbsp. celery seed
2 tsp. cayenne
1/4 tbsp. Colman's mustard
1/2 tbsp. thyme
1 1/2 tbsp. paprika
1 tsp. black pepper
1/2 tsp. ginger
