3/4 c. Crisco or Spry (not butter) 3/4 c. white sugar 3/4 c. brown sugar 3 c. flour 2 eggs, beaten 1/2 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. cloves 1/2 tsp. ginger 1/4 c. molasses 1/8 c. water 1 c. raisins (more if you wish) 1 c. broken nuts (usually walnuts) Cream shortening with sugar. Add eggs (but save 1 tablespoon to brush on top of cookies). Add dry ingredients alternately with liquids. Add nuts and raisins. Divide dough into thirds. Spread into strips about 3 inches wide down a large greased cookie sheet. Shape strips by hand so they are neat and even. (I usually put 2 strips on one cookie sheet to allow for spreading.) Using fingers brush each strip with reserved tablespoon of beaten egg. This gives bars a glazed top. Bake at 350 degrees for 12 to 15 minutes. Cool a few minutes on sheet and cut into bars. They can be glazed with confectioner's sugar or icing if you wish. To keep soft, put them in air tight container. |
