SWISS STEAK, GEORGE'S 
1 1/2 lbs. round or sirloin steak, 1/2 - 3/4 inch thick
1/8 tsp. salt
Pinch pepper
1/8 tsp. sugar
3 tbsp. oil
3 tbsp. flour
1/3 c. ketchup
1 sm. onion, diced
2 tbsp. celery diced
1 1/2 c. water

Cut steak into portions to be served. Put oil in skillet. Salt and pepper meat. Score or pound flour in meat. Saute meat until nice and brown (don't burn!). Remove meat from pan. Add ketchup (ketchup has all the spices in it). Add 1 cup water. Put steak in sauce. Add onion and celery. Add more water if needed. Cover, simmer for 45 minutes to 1 hour and 15 minutes. 2 tablespoons wine may be added. Mushrooms are optional.
