VEGETABLE COLESLAW 
1 sm. cabbage, trimmed and shredded finely
2 carrots, peeled, grated
1 sm. onion, peeled, minced
1 red pepper, minced
1 green pepper, minced
2 tbsp. grapefruit juice
1/3 c. vegetable oil
1/2 tsp. dry mustard
1/2 tsp. caraway seeds
1 clove garlic, chopped

In a large bowl, combine cabbage, carrots, onion, peppers and toss well.

In a jar, combine juice, oil, mustard, seeds and garlic. Cover and shake until blended. Pour contents of jar over vegetables and gently toss. Refrigerate until serving.
