2 bags frozen vegetables (spinach, broccoli, cauliflower) 1 med. onion 1/2 c. mushrooms 2 tbsp. butter, butter 3 egg whites 1/2 lb. Muenster cheese, grated 1 can French fried onion rings or chow mein noodles (opt.) Undercook and drain frozen vegetables. Saute onion and mushrooms in butter. Beat egg whites until stiff. Mix with vegetables. Add onions, mushrooms and most of cheese. Mix well. Top with remainder of cheese and chow mein noodles or onion rings if desired. Bake at 375 degrees for 55 minutes in 9 x 13 inch pan. Serves 4 to 6. |
