VEGETABLE-TUNA SOUFFLE 
2 tbsp. butter
2 tbsp. flour
1/2 c. milk
3 eggs, separated
1/2 c. cooked vegetables, drained and chopped
1 tbsp. chopped onion
1/8 c. chopped tomato, drained
1/4 c. drained flaked tuna
2 tbsp. grated cheese
Salt, pepper, cayenne

Heat butter in pan; stir in flour. Add milk. Heat, stirring constantly, until smooth and thick. Remove from heat. Beat in egg yolks one at a time. Add drained and chopped vegetables, onion, tomato, tuna, grated cheese, seasonings to taste; stir to combine.
