TUNA FISH SOUFFLE 
2 tbsp. butter
1 lg. onion
2 tbsp. flour
1 c. milk
2 egg yolks
2 egg whites
1 can tuna

Saute onions in butter until cooked. Add flour to frying pan and add milk to make a smooth sauce. Beat egg yolks and add to sauce.

Flake tuna fish with fork and add to mixture. Remove from stove. Beat egg whites until stiff and fold in carefully. Put in casserole dish and bake at 350 degrees until brown on top (3/4 to 1 hour).
