WINTER CHICKEN STEW | |
2 tbsp. butter 6 pieces turkey bacon 2 chicken breasts boneless and skinless 2 large onions sliced 8-10 small red potatoes cut in halves 4 celery stalks cut in 1/2 inch slices 3 large carrots 1/2 lb. fresh mushrooms or 1 large can sliced 2 tbsp. fresh basil 1/2 c. white wine 1/2 c. chicken broth salt and pepper to taste 1-2 cloves of garlic chopped Brown bacon in butter. Remove bacon and set aside to cool. Break up in bits for garnish over finished dish. Cut up chicken into 1 inch chunks and brown in skillet about 10 minutes. Remove to bowl and cover. Add onion and garlic to skillet, cook and stir until onion is soft about 3 minutes. Add rest of ingredients and chicken to pan. Cover and simmer until veggies are soft. |
