NEW ENGLAND BOILED DINNER WITH
CORNED BEEF OR HAM
 
1 sm. ham, not canned or 1 flake brisket of corned beef
Peeled carrots
Potatoes
Quartered cabbage

For ham, put water in pan to cover and boil for about 2 hours. For corned beef, cook 3 1/2 to 4 hours. Add peeled carrots. Cook 10 minutes. Add potatoes. Cook about 10 or 15 minutes. Add quartered cabbage and finish cooking until vegetables are soft but not too soft.

Boiled dinner a favorite but after two days worth of the ingredients I put everything through the grinder and add a couple of cans of beets making what I call red flannel hash. This heated in a pan on top of the stove will give a light crust and topped with a little ketchup makes a fine lunch or dinner. Excess goes into Tupperware for storage in the freezer.

Love this meal! Mom used a smoked pork picnic ham... when cooked in broth the meat became stringy, flavorful, and easy to pull apart in your bowl. I can't find a smoked picnic ham to save my soul... can anyone help? Five to eight pounds is more than enough for my family... however I do pass around to my root vegetable fan friends. Rutabaga, turnips, carrots, parsnips, onion, celery, cabbage, and a few potatoes. I'm disappointed when I get potato, so bland compared to the rest. I live in Westland, Michigan. I've looked online with no luck. Last year I visited my local meat store to see if they would order one. Their supplier would only ship ten or more... and not enough people use this type of ham. Their loss...

Try a local IGA for the picnic, they aren't cheap anymore but the taste is better than ham. Buckley Mi.
