NEW ENGLAND BOILED DINNER WITH
CORNED BEEF OR HAM
 
1 sm. ham, not canned or 1 flake brisket of corned beef
Peeled carrots
Potatoes
Quartered cabbage

For ham, put water in pan to cover and boil for about 2 hours. For corned beef, cook 3 1/2 to 4 hours. Add peeled carrots. Cook 10 minutes. Add potatoes. Cook about 10 or 15 minutes. Add quartered cabbage and finish cooking until vegetables are soft but not too soft.

Great dinner! My husband is from New England and had this all the time when he was a kid. Its simple to make and low maintenance which I love. The other review about the cabbage was VERY helpful so I didn't over cook the cabbage. The coloring was beautiful. Definitely a great Sunday meal which turns Monday into a Black Bean soup and Tuesday into black beans and rice with left overs... basically its 30$ for a weeks worth of dinners, not a bad way to spend your grocery budget!

I grew up just North of Boston in the 40's and 50's. This meal was served at many restuarants as a Thursday special. It is still one of my favorite meals. I usually cook the meat all day in a crockpot but cook the vegetables seperate so I can control their cooking times. Especially the cabbage. The cabbage should be cut in 8ths with the core still attached to hold it together. Cook it carfully for 10 minutes so it doesn't all seperate. It looks good and serves better as an intact wedge.

One of my favorite meals to make. It's very simple. Traditional St. Patrick's Day meal, or good for other special occasions too.
