1 egg
1/2 c. orange juice
1/2 c. pancake mix

Mix together, use only 1 tablespoon batter for each crepe. Drop on hot griddle until golden brown turning only once. Brush with melted butter and top with a dollop of whipped cream, sprinkle with coconut.
