SPICY CHILI SAUCE | |
4 qts. peeled, cored, chopped ripe tomatoes 1 1/2 c. chopped sweet green peppers 2 c. chopped onions 1 1/2 c. vinegar 1 1/2 c. sugar 1 tbsp. salt 1 tbsp. celery seed 1 tsp. ginger 1 tsp. cinnamon 1 tsp. allspice 1 tsp. cloves Combine all ingredients. Simmer until thick as desired, about 1 1/2 hours. Stir often to prevent sticking. Pour boiling hot chili sauce into hot jars, leaving 1/4" headspace. Process pints about 15 minutes in water bath. Yield: about 8 pints. |
