SQUASH CASSEROLE 
2 yellow squash
4 to 6 tbsp. diced onion
butter
herb flavored stuffing
1 (15 oz.) can sliced peaches, diced
1 (10 oz.) can cream of chicken soup

Cut the squash and onion up very fine. Add some butter to a pan. Add the squash and onion. Cook until tender. Drain if it gets juicy. Set aside.

Prepare the stuffing as per package directions. Add a small amount of butter to your casserole dish and layer about a 4th of the stuffing into the pan.

Drain the can of peaches and dice them up. Add the peaches and cream of chicken to the squash and onion. Mix up very well.

Layer on top of the stuffing. Cover with the rest of your stuffing mix. Bake at 375°F until bubbly. Usually about 30 to 45 minutes.
