RICH CHOCOLATE MOUSSE | |
6 tbsp. strong coffee 4 tbsp. brandy 8 oz. semi-sweet chocolate 1/4 c. sugar 1 3/4 c. heavy cream 1 tbsp. sugar (for cream chantilly) 1/4 tsp. vanilla Pour coffee and brandy into a large bowl. Add chocolate and stand bowl over boiling water until completely melted. Stir until well blended then add sugar and stir until glossy and smooth. Let cool. To make the cream chantilly, whip the cream until very thick then add the sugar and vanilla and beat well. Gently fold in the chocolate mixture and pour into separate serving dishes and refrigerate. Serves 6. |
